Abstract: Fresh produce consumption in the United States (U.S.) is on the rise. In 2004, consumption was estimated to have risen by 3 percent year over- year to 332 pounds per capita. By virtue of incorporating these items further into their daily diets, U.S. consumers are also developing higher expectations for quality and availability and as such, imports account for a growing percentage of consumption.
The U.S. has long been a major producer and exporter of high-quality fresh produce.
