Abstract: Over the past few years, ethnic food has become increasingly popular all over the world. One of the main reasons is the adoption of new tastes by the mainstream population. The U.S. is the largest market for ethnic food, estimated at EUR 58 billion, where almost three-quarters of the demand comes from non-ethnic customers who are willing to try out new flavors and stronger, authentic tastes.
