Abstract: Canada’s meat industry encompasses the production, slaughtering and further processing of pork, beef, chicken and turkey. Growth rates across the different industry segments vary as does the institutional framework. While a supply-managed regime characterizes the chicken sector, production and slaughtering in the pork and beef sectors is more open to market conditions.
