Abstract: In the mature food markets of Europe, food supply chains have shifted from push to pull. In other words, food retailers no longer act as a serving hatch for food manufacturers. Large food retail multiples identify consumer demand and pass it on, back into the food chain. Although not a new phenomenon the food safety and sustainability issues have been specifically added to the list of retailers’ demand via a newly created protocol called “EUREPGAP”.
