Abstract: Over the last decade, China’s instant noodle output has been growing at over 30% p.a. to reach 21.9bn packs in 2002, accounting for about 40% of the world’s production. The size of the market for instant noodles in China was an estimated US$2bn in 2002. The rapid growth is mainly driven by the rising income and faster pace of living which has resulted in increasing demand for convenient, hygienic and tasty food.
